  • 4 large bell peppers (any color)
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 cup tomato sauce
  • 1/2 cup diced onions
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste


  1. Preheat your oven to 350°F (175°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large skillet, brown the ground beef over medium heat. Drain any excess fat.
  4. Add onions, garlic powder, Italian seasoning, salt, and pepper to the skillet. Cook until onions are soft.
  5. Stir in the diced tomatoes, cooked rice, and 1/2 cup of tomato sauce.
  6. Fill each bell pepper with the beef mixture and place them in a baking dish.
  7. Pour the remaining tomato sauce over the stuffed peppers.
  8. Cover the dish with aluminum foil and bake for 30 minutes.
  9. Remove the foil, sprinkle shredded cheddar cheese on top of each pepper, and bake for an additional 10 minutes or until the cheese is melted and bubbly.
  10. Remove from the oven, let cool for a few minutes, and serve your colorful stuffed bell peppers.
